"<p>The author further stresses that artificial vitamin D in milk is not a good solution, to handle bone density, but recommends sunlight. However, sunlight is not always available in sufficient quantity in many locations. Therefore direct application of vitamin D is recommended in those areas. You can find some of his publications in the Journal of the Academy of Nutrition and Dietetics. I found 399 that were written by him in <span class=\"font_publikation\">PubliMed</span>.</p>    <p>He stressed for example, that for the absorption of calcium, both types of vitamin D, i.e. 25(OHD) and 1,25(OH)2D, are needed as well as proteins and phosphorus. Heany condemns calcium additions in beverages. There are authors who recommend 40-60 ng/mL plasma-25(OH)D, as has been seen with the <a href=\"https://en.wikipedia.org/wiki/Maasai_people\" target=\"_blank\" class=\"external\" rel=\"noopener\">Maasai</a>.</p>  </div><div class=\"clearfix\"></div></div>    <p><span class=\"font_menschen\">Cohen</span> declares on page 270 that, for example, cabbage has the same amount of calcium such as milk, but the body absorbs only 25% of the calcium in cow&rsquo;s milk, while considerably more from cabbage. Quite a different variety of cabbage species exist. The cabbage also has wild species, for example, <a href=\"https://en.wikipedia.org/wiki/Brassica_oleracea\" target=\"_blank\" class=\"external\" rel=\"noopener\">brassica oleracea</a>.</p>    <p>On page 271 a statistic shows 2&#39;598 asthma deaths in 1979 and 5&#39;487 by 1994. In 1979 Americans drank a lot of milk with little protein but rich in fat. In 1994 however, the milk was lower in fat with a lot of protein. More African Americans were afflicted with <a href=\"https://en.wikipedia.org/wiki/Asthma\" target=\"_blank\" class=\"external\" rel=\"noopener\">asthma</a> than white people. They also have more milk allergies in the same proportion. Shouldn&rsquo;t this set the mental wheels in motion?</p>  </div>  </div><h3 id=\"2-13-mad-cow-disease-and-prions-a-frightening-biological-forecast\">2.13. Mad Cow Disease and Prions: A Frightening Biological Forecast</h3><p>In the second to the last chapter, the author covers the problem of BSE on eight pages. That was a big problem at that time. BSE stands for bovine spongiform encephalopathy (mad cow disease), caused by <a href=\"https://en.wikipedia.org/wiki/Prion\" target=\"_blank\" class=\"external\" rel=\"noopener\">prions</a> in the brain. It is similar to the previously known <a href=\"https://en.wikipedia.org/wiki/Scrapie\" target=\"_blank\" class=\"external\" rel=\"noopener\">scrapie</a> in sheep.</p><p>Both are dangerous to humans and leads to death. The author covers haw remedial measures were wrongly executed and late, as well as the mockery of people who issued early warnings. Since the problem now seems detected and corrected, I will not take it up here.</p><h3 id=\"2-14-alternatives-to-milk-337-references-starting-on-page-289-index-pages-307-317\">2.14. Alternatives to Milk (+ 337 References starting on page 289 + Index pages 307-317)</h3><p><span class=\"font_menschen\">Cohen</span> is actually an omnivore, eating both meat and dairy products. He had only dramatically reduced the cheese consumption in his family. I do not consider the alternatives he lists out to be healthy foods. See also a photo of <span class=\"font_menschen\">Cohen</span> further above in this article. Nevertheless, he propagates that excluding of milk and dairy products leads to a longer and healthier life.</p><p><span class=\"font_menschen\">Cohen</span> gives alternatives to milk, which I will greatly expand upon here. <a href=\"https://en.wikipedia.org/wiki/Almond_milk\" target=\"_blank\" class=\"external\" rel=\"noopener\">Almond milk</a>, for example, various types of cereal milks such as <a href=\"https://en.wikipedia.org/wiki/Rice_milk\" target=\"_blank\" class=\"external\" rel=\"noopener\">rice milk</a>, oat milk, spelt milk, rye milk, einkorn milk and of course <a href=\"https://en.wikipedia.org/wiki/Soy_milk\" target=\"_blank\" class=\"external\" rel=\"noopener\">soy milk</a> which I personally reject and not only for <a href=\"https://en.wikipedia.org/wiki/Environment\" target=\"_blank\" class=\"external\" rel=\"noopener\">environmental</a> reasons. Almond milk was known as amygdalate since the Middle Ages. Most of these &ldquo;milks&rdquo; are available as organic products.</p><p>The dairy industry in the EU was able to get legislation passed stipulating that the word &ldquo;milk&rdquo; may not be used with products such as rice milk, soy milk, etc. It has to be called rice drink or rice beverage, for example.</p><div class=\"collapsel\">  <h4 class=\"collapsel-title\">Other milk substitutes</h4>    <div class=\"collapsel-content\">  <p>There are other milk substitutes such as <a href=\"https://en.wikipedia.org/wiki/Kokkoh\" target=\"_blank\" class=\"external\" rel=\"noopener\">kokkoh</a> (a mixed drink from the <a href=\"https://en.wikipedia.org/wiki/Macrobiotic_diet\" target=\"_blank\" class=\"external\" rel=\"noopener\">macrobiotic</a>) or <a href=\"https://en.wikipedia.org/wiki/Douzhi\" target=\"_blank\" class=\"external\" rel=\"noopener\">Douzhi</a>, i.e. mung bean milk.</p>    <p>When we were in the US, we drank hemp milk which is very tasty. Nevertheless, it is not <a href=\"https://en.wikipedia.org/wiki/Raw_foodism\" target=\"_blank\" class=\"external\" rel=\"noopener\">raw food</a>. After all, <span class=\"font_institution\">Wikipedia</span> lists it as <a href=\"https://en.wikipedia.org/wiki/Hemp_milk\" target=\"_blank\" class=\"external\" rel=\"noopener\">hemp milk</a> (Italian Latte di canapa) and also mentions <a href=\"https://en.wikipedia.org/wiki/Peanut_milk\" target=\"_blank\" class=\"external\" rel=\"noopener\">peanut milk</a>. My own image: milk from flaxseed.</p>    <p>There is also <a href=\"https://en.wikipedia.org/wiki/Grain_milk\" target=\"_blank\" class=\"external\" rel=\"noopener\">grain milk</a>, or more precisely fermented &ldquo;grain milk&rdquo; made from <a href=\"https://en.wikipedia.org/wiki/Quinoa\" target=\"_blank\" class=\"external\" rel=\"noopener\">quinoa</a>, <a href=\"https://en.wikipedia.org/wiki/Spelt\" target=\"_blank\" class=\"external\" rel=\"noopener\">spelt</a>, oats, rice, rye, <a href=\"https://en.wikipedia.org/wiki/Einkorn_wheat\" target=\"_blank\" class=\"external\" rel=\"noopener\">einkorn</a> (wild precursor of emmer) barley milk, e.g. as <a href=\"https://en.wikipedia.org/wiki/Orgeat_syrup\" target=\"_blank\" class=\"external\" rel=\"noopener\">orgeat</a>, or wheat milk.</p>    <p>Not to be forgotten is <a href=\"https://en.wikipedia.org/wiki/Plant_milk\" target=\"_blank\" class=\"external\" rel=\"noopener\">sunflower seed milk</a> and the popular <a href=\"https://en.wikipedia.org/wiki/Coconut_milk\" target=\"_blank\" class=\"external\" rel=\"noopener\">coconut milk</a>, which virtually always includes <a href=\"https://en.wikipedia.org/wiki/Emulsion\" target=\"_blank\" class=\"external\" rel=\"noopener\">emulsifiers</a>, <a href=\"https://en.wikipedia.org/wiki/Stabilizers\" target=\"_blank\" class=\"external\" rel=\"noopener\">stabilizers</a> and/or <a href=\"https://en.wikipedia.org/wiki/Thickening_agent\" target=\"_blank\" class=\"external\" rel=\"noopener\">thickeners</a>.</p>    <p>Sesame milk (sesame seed milk) is available at least in the US. <a href=\"https://en.wikipedia.org/wiki/Sesame\" target=\"_blank\" class=\"external\" rel=\"noopener\">Sesame</a> is rich in interesting ingredients and gluten-free. Flaxseed milk is especially rich in <a href=\"https://en.wikipedia.org/wiki/Omega-3_fatty_acid\" target=\"_blank\" class=\"external\" rel=\"noopener\">omega-3 fatty acids</a> and in this respect <a href=\"https://en.wikipedia.org/wiki/Flax#Flax_seeds\" target=\"_blank\" class=\"external\" rel=\"noopener\">flaxseed</a> is unsurpassable.</p>    <p><a href=\"https://en.wikipedia.org/wiki/Cashew\" target=\"_blank\" class=\"external\" rel=\"noopener\">Cashew</a> milk, <a href=\"https://en.wikipedia.org/wiki/Hazelnut\" target=\"_blank\" class=\"external\" rel=\"noopener\">hazelnut</a> milk and nut milk (<a href=\"https://en.wikipedia.org/wiki/Juglans_regia\" target=\"_blank\" class=\"external\" rel=\"noopener\">common walnut</a>) are also available in the U.S.</p>    <p>There is also vegetable-based milk such as from <a href=\"https://en.wikipedia.org/wiki/Lupinus\" target=\"_blank\" class=\"external\" rel=\"noopener\">lupine</a> (<a href=\"https://en.wikipedia.org/wiki/Lupinus\" target=\"_blank\" class=\"external\" rel=\"noopener\">Lupinus</a>) or <a href=\"https://en.wikipedia.org/wiki/Pea\" target=\"_blank\" class=\"external\" rel=\"noopener\">peas</a>.</p>    <p><a href=\"https://en.wikipedia.org/wiki/Horchata\" target=\"_blank\" class=\"external\" rel=\"noopener\">Horchata</a> is also a delicious milk substitute. In Spain, chufas (<a href=\"https://en.wikipedia.org/wiki/Cyperus_esculentus\" target=\"_blank\" class=\"external\" rel=\"noopener\">tiger nuts</a>) are used. <span class=\"font_institution\">Wikipedia</span>: &ldquo;tiger nuts consist of more than 25% <a href=\"https://en.wikipedia.org/wiki/Fat\" target=\"_blank\" class=\"external\" rel=\"noopener\">fat</a>, about 30% <a href=\"https://en.wikipedia.org/wiki/Starch\" target=\"_blank\" class=\"external\" rel=\"noopener\">starch</a> and about 7% of <a href=\"https://en.wikipedia.org/wiki/Protein\" target=\"_blank\" class=\"external\" rel=\"noopener\">protein</a>. They contain a lot of <a href=\"https://en.wikipedia.org/wiki/Unsaturated_fat\" target=\"_blank\" class=\"external\" rel=\"noopener\">unsaturated fatty acids</a> such as <a href=\"https://en.wikipedia.org/wiki/Linoleic_acid\" target=\"_blank\" class=\"external\" rel=\"noopener\">linoleic acid</a>, <a href=\"https://en.wikipedia.org/wiki/Biotin\" target=\"_blank\" class=\"external\" rel=\"noopener\">vitamin H</a> and <a href=\"https://en.wikipedia.org/wiki/Rutin\" target=\"_blank\" class=\"external\" rel=\"noopener\">rutin</a> and many <a href=\"https://en.wikipedia.org/wiki/Mineral\" target=\"_blank\" class=\"external\" rel=\"noopener\">minerals</a>.&rdquo;</p>    <p>Quite exotic are <a href=\"https://en.wikipedia.org/wiki/Aguas_frescas\" target=\"_blank\" class=\"external\" rel=\"noopener\">aguas frescas</a>, xing ren cha or <a href=\"https://en.wikipedia.org/wiki/Sikhye\" target=\"_blank\" class=\"external\" rel=\"noopener\">sikhye</a>, Korea, which are slightly alcoholic. <a href=\"https://en.wikipedia.org/wiki/Amazake\" target=\"_blank\" class=\"external\" rel=\"noopener\">Amazake</a> from Japan is another type of fermented milk alternative containing alcohol.</p>  </div>  </div><p><div class=\"text-image-container\"><a class=\"lightbox internal\" href=\"/images/u/100122/alternatives-to-cow-milk-1.png\" title=\"Alternatives to cow&amp;#039;s milk consumption, represented by 12 packs of very different plant milk. More interesting are the 55 reader reviews, of which 28 gave the highest rating with 5 stars (followed by 5x ****, 5x ***, 4x ** star), while 13 reviews tear the book apart with a 1 star rating. The average rating is 3.5 stars.</p>    <p>One woman writes about her 20-year-old daughter with breast cancer, another reader recommends the book &quot;<span class=\"font_publikation\">Beyond Beef&quot; </span>by <span class=\"font_menschen\">Jeremy Rifkin</span>.
